Here's an easy-to-make home made salad dressing that's just  perfect to dress a summer salad. One good thing about these cooler August days: my salad greens are growing again with abandon. I seeded a mix of red lettuces in the shade of my cucumber plants in late July, and at last, greens again from my garden, oh my!

  • 1/4 cup olive oil
  • 1/4 cup champagne or rice vinegar
  • 1/4 cup fresh lemon juice (2-3 tablespoons, about one large lemon)
  • 1 t. dried mustard
  • ¼ t. salt

Mix all ingredients in a small glass jar and shake well, or mix all ingredients but the olive oil in a small bowl and slowly whisk in olive oil. This light lemony salad dressing is delicious served on a buttery Bibb lettuce or similar mild greens. Finely chopped red onion, shredded carrots and sliced radishes add taste, color and texture. The zing of the radishes will be matched by the tang of the mustard. Enjoy!
